As we have become more and more submersed in the world of homesteading we have come across some amazing recipes that we want to share with you. We have added our own touches to each recipe to ensure that they work best for us and our favourite ingredients. We would love to hear from you once you have tried out the recipes, and have put your own creativity into them!

Creamy-Dreamy Fettuccini

Sauce:                                                                    Pasta:             

2 cups of whole milk                                                2 cups of all-purpose flour         

1/2 cup of cream                                                    5 large eggs

4 tablespoons of butter

3 tablespoons of flour

1/2 cup shredded cheddar cheese

1/2 tablespoon ground garlic

1/2 tablespoon salt

1/2 tablespoon pepper


Preparation:

1. Bring butter to a boil in a large sauce pan.

2. Sprinkle flour into bubbling butter and whisk.

3. Once combined, continue whisking while adding the whole milk.

4. Continue to whisk until the sauce returns to a boil.

5. Whisk in cream, and allow to return to a boil. Reduce temperature at this point.

6. Add in garlic, salt and pepper.

7. Add cheddar cheese and stir to combine.

8. Allow to continue simmering on low heat while you prepare you pasta.

9. On a large surface, create a mound. Create an indent in the middle of the mound large enough for 5 eggs.

10. Crack the eggs into the middle of the mound. Begin to whisk the eggs until fluffly.

11. Combine the flour and eggs until a dough forms. The dough should not be sticking to your hands, add increments of flour until the dough no longer sticks.

12. Roll out your dough to the thickness you like (or put it through the pasta machine to achieve a finer result), and slice into lengthwise fettuccini noodles.

13. Allow the noodles to hang over butcher twine until somewhat dry.

14. Boil your water and cook for approx. 5 minutes.

15. Serve you prepared sauce over your fresh pasta and ENJOY!
