Dairy Products 101

In this workshop we will go over the basic methods for making ricotta, butter, sour cream, yogurt and ice cream. There is nothing more exciting than seeing a gallon of milk turn into so many well-known and well-loved dairy products! Feel free to make each of the products along with me, only some, or audit and enjoy learning the process! Each participant will receive a document with written instructions to continue practicing the skills after the class.

Below is a list of the ingredients needed for each creation (you can use less of each if you wish - just ensure to divide any of the additives!):

- Ricotta - 4 liters skim milk + white vinegar
- Cream Cheese - 4 liters whole milk + white vinegar
- No-Bake Cheesecake - (cream cheese from above) + 0.5 cup of cream
- Butter - 1 liter of heavy cream (feel free to use as much as you wish)
- Yogurt - 4 liters of whole milk + 1/2 cup greek yogurt (natural and plain)
- No-Churn Ice Cream - 1 liter of heavy cream + vanilla extract + salt + white sugar
